This is what I do with Thanksgiving leftovers:
Make Thanksgiving sandwiches with turkey, cranberry sauce, stuffing, mashed potatoes and gravy. And this...
Michael Chiarello's "Thank Goodness It's Over Bruschetta" with blue cheese and cranberry sauce. This was good and an unusual way to use up the cranberry sauce. But I prefer the sandwich. Here are more ideas.
Michael C's Bruschetta:
1 clove garlic, cut in half
1/2 loaf leftover bread
3/4 cup cranberry sauce
3/4 cup crumbled blue cheese
Preheat oven to 375 degrees F.
Slice the bread, rub with cut garlic clove and place in a heated dry cast iron grill pan on the stove top. Cook until toasted, about 2 minutes. Flip and toast the other side, about 1 minute more.
Slather the bread with leftover cranberry sauce, top with crumbled blue cheese. Place in the oven until cheese melts and serve.
