I'm just not sure what to make of this Atlanta Journal-Constitution article on kudzu as a culinary treat. For those not familiar with kudzu, it's this massive weed that has practically taken over the South. According to the article, kudzu covers more than 7 million acres from the Carolinas to Texas.
I guess we eat dandelion greens and they're a weed as well? I've just hated kudzu for so long due to its mass destruction of anything in its path, I can't imagine enjoying it as a food. But I will look at it differently from now.
